Popcorn Balls

 

2 cups sugar
1 1/3 cups water
1/2 cup light corn syrup
1 teaspoon lemon juice
1/2 teaspoon salt
1 teaspoon vanilla extract
18 cups popped corn


In a sauce pot, bring sugar, water, lemon juice and corn syrup to a boil. With a candy thermometer, heat to 255 degrees. Add salt and vanilla. We are going to lightly drizzle the mixture over the popcorn, mixing often. Lightly oil your hands or spray with pan spray. As the mixture cools to a temperature that is safe and able to handle, you will be able to form into popcorn balls. Form into any sizes you want. I like to wrap them with a clear wrap and ribbon.
