Marinated Asparagus Salad

Marinated Asparagus Salad
10 oz pkg frozen asparagus (or fresh)
½ cup olive oil
1/3 cup lemon juice
1 pack Italian dressing mix
3 Tbsp green pepper fine diced
3 Tbsp chopped radish fine chopped
1 Tbsp parsley chopped
1 Tbsp chopped chives
1 head Boston lettuce
4 thick tomato slices
4 red pepper strips

Blanch off asparagus in boiling water for 2 minutes and then shock with cold water to keep the color green and stop the cooking process. In a container with a lid, mix oil, lemon juice, salad dressing and shake well. Add green peppers, radishes, parsley, chives, and asparagus; toss a couple times and refrigerate overnight. Drain and keep reserve marinade. Line 4 salad plates with lettuce, place tomato slice on lettuce, and top with asparagus spears. Gather together into a bundle and arrange red pepper strips to look like ties. Pour remaining dressing over salad.
