1 cup water
½ cup almonds, blanched
½ cup water
½ tsp. salt
1 tsp onion powder
1 tsp. mustard powder
½ cup olive oil
2 Tbsp. lemon juice

In small sauce pan bring 1 cup of water and the ½ cup of almonds to a boil. Remove from heat. Rinse almonds with cold water and remove skins.
In a blender add; blanched almonds, ½ cup water, salt, onion powder and mustard powder. Blend on high speed until creamy. Slowly drizzle in olive oil while blender is still on high speed. Blend for 1-2 additional minutes. Pour mixture into small bowl. Add lemon juice stirring with whisk until creamy. Refrigerate in storage container or pint jar.
